Keto Copycat Uncle Ben's Rice

*mwahahahahahaha* I've done it!! IGOR! It's happened. EUREKA!


Coming in at a healthy 56 calories!!!!! 2 net carbs!!!!!! THIS IS THE BEST THING I'VE EVER DONE. EVEN BETTER THAN MY KIDS. OKAY, MAYBE NOT, BUT THE EXCITEMENT LEVEL IS SUPER HIGH RIGHT NOW. Without further ado, here is the recipe for this GOLD!

-4 cups cauliflower rice (I prefer Green Giant but any will do I'm sure)
-2 Tbsp Salted Butter (I love Kerrygold, but you can use whatever you prefer)
-2 tsp of Better than Bouillon Concentrated Stock
-4 Tbsp Water
-1 tsp of dehydrated onion flakes
-1/2 tsp parsley flakes
-1/4 tsp garlic powder
-1/4 tsp onion powder
-1 tsp ground turmeric
-1/4 tsp cumin
-1/4 tsp ground ginger
-1/2 tsp freshly ground black pepper

  1. Combine all spices, water and Better than Bouillon in a small bowl. Set aside to rehydrate spices and herbs while you prepare the cauliflower rice (takes approx. 10 minutes). Looks like this:
  2. In a medium sized frying pan cook the cauliflower rice with butter. Overcook slightly (some pieces should be quite soft while others remain firm). 

  3. Add bowl of spices and water and stir over heat until all of the cauliflowered rice has turned yellow. Serve. Makes 6 servings.
